Italian Dinner against AIDS

Yesterday evening we tried a very tasty italian dinner! A lot of food has its origins in Italy, but we last night we got to try different, special dishes. We started with pasta with mushrooms then aubergine parmigiana and finally a nice meat dish. Thank you Clizia, for bringing a little bit of Italy to Belgium!

Here the recipes for the dishes, to repeat at your own home:


Pappardelle with mushrooms and cream

- 500 gr pasta (pappardelle)
- 500 gr mushrooms
- garlic
- parsley
- 300 ml cream (salted)
- oil
- white wine

Put oil, garlic and parsley in a pan, then add the mushrooms and a bit of white wine. Cook until all the liquid has been absorbed (approximately 20 minutes). Add the cream and allow to simmer gently.
Cook the pasta in a saucepan of boiling salted water following directions on the packet. Drain and put pasta together with the sauce for few minutes before serving.

Aubergine Parmigiana

- 1 kg of Aubergine (eggplant)
- Basil
- 4 Mozzarella
- 100 gr Parmigiano
- 700 ml tomato pulp

Cut the eggplant into slices, then you can coat each slice with a little flour, and fry it for a few minutes in the heated olive oil, or for a light version, bake or grill them.
Next, arrange the slices of eggplant at the bottom of an oven-proof dish. Pour on the tomato sauce along with the basil, then add a layer of mozzarella and parmigiano. Repeat the process with another layer of eggplant, tomato and cheese, ending with a sprinkling of salt and pepper.
Cook in the oven for about 40 minutes and remove the dish ten minutes before serving.

Cotoletta alla milanese

- 5 veal cutlets
- 2 eggs, beaten
- 1/2 cup finely ground breadcrumbs
- oil

Beat the eggs in a plate with salt and pepper. In another plate put the breadcrumbs. Put the cutlets first in the eggs and then in the breadcrumbs.
Fry them quickly in the hot oil, turning once so both sides are brown and serve hot!
